Easy Breakfast Quiche

This breakfast quiche is easy to prepare because it uses pre-made pie crust.  It tastes delicious reheated, so you can make it the night before.  For a vegetarian version, just skip the ham and add extra spinach and cheese.  

1 frozen pre-made pie crust

4 eggs

1 cup half and half

1 cup chopped spinach

1 cup chopped ham

1 cup grated cheddar

Defrost the pie crust according to instructions.  Whisk together the eggs and half and half in a separate bowl and set aside.

Place the crust in a 9″ pie shell and fold under the edges.  Layer half of the spinach, ham, and cheese.  Then layer the rest of the spinach ham, and cheese.  Pour the milk mixture over the top.

Bake at 350 degrees for 40 to 45 minutes or until the quiche is set in the center.

Let cool.  If you make it the night before, cover and refrigerate.  Reheat in the microwave the next morning.  Serve at room temperature for potluck time!
